Robby's Chicken Breasts

Here is a recipe I made up. I think it is pretty good.

Robby’s Chicken Breasts
5 to 8 breasts, depending on size (either boneless and skinless or *debone and remove skin yourselves-I like to do it this way because it is cheaper and I use the bones for my broth)
Pound meat to flatten a bit. (You can brine them only if you want)
*If you debone them I put the bones in some water and boil them to make a chicken broth to make my sauce with*
Pour some Italian style dressing over breasts and let set while cutting up veggies.
Heat butter and oil mix in large frying pan over med. high heat. Then add breasts and salt and lemon pepper them on one side only. Cook until well browned on outside (any pink in middle will be taken care of in oven)
Remove chicken to plate.
Then take some sliced mushrooms (1-2 cups) and 2-3 chopped green onions and sauté in chicken pan drippings with 2 T. butter added.
Throw in some flour (1/3 C. or so) to make a roux. Add 2 C. broth (either from can or boiled chicken with added chicken broth concentrate if needed) and 1/3 C. sherry and cook until thickened then add ½ C. cream (optional) and 1 c. sour cream.
Put chicken in 13x9 casserole and pour sauce over it. Cook at 350° for about 20-25” until bubbling.

Serve over rice or pasta.

The Sweet Life

I had to write a little introduction about myself for this online thing... so here it is...

My Name is Katie Pedersen. I’m 17 years of age and a Senior at Mount Rainier High School, but I’m doing Running Start at Highline Community College full time. I’m loving the end of my summer. Work, dance, and scholarships are keeping me busy. I currently work at the Danish Bakery in Burien, and I am having a blast. I am enjoying being with my peeps, I’ve made a bunch of new friends recently and I am loving all of them, but I also said goodbye to a lot of people that I love who left for college, so that is a bit rough, but luckily I keep in contact with them and we are still super tight. This summer, though, I can tell that I changed a lot. Through the course of many hard events, I have made a change for the better. I’ve been planning out my life after college forever, but it’s really scary when you realize that it is so soon. I’m making sure that I am doing everything I can to be able to have the best life possible after high school and that not only includes college, but living my life so that when all is said and done, I can be proud of the person I have become. I’ve come to the conclusion that music, literature, and people that don’t help me to be a better person are not worth my time, and I try to avoid them, so if you feel the same way, you and I should shake up this town. I am on the Youth Premier Team of the Pacific Ballroom Dance Company, and I love it. I’m learning so much, and having a blast. I love to dance, not only ballroom, but just the movement of ones body to express a feeling amazes me. I dance when I’m alone all the time and I laugh, scream and cry when I do it depending on what I feel. Dance is amazing. I’m also really into photography, and recently videography. There is something about capturing someone’s image perfectly, and holding a moment of time in your hands that mesmerizes me. It’s something I have come to love, and I’m working hard to become good at. I love interior design and fashion. I enjoy making things look beautiful and perfect. I either love things or hate them. I have really bad OCD sometimes about certain things, so if I start bugging you, just smack me. I can’t wait to have a family of my own. My family is so amazing and they are all such great examples to me, and I am really excited for when the time comes that I can have my own house, husband, and chillins. I hope I can be half the mom that my mom is. She seriously is amazing. I have learned so much through her example and hope to be like her someday. I drive a 1983 Volvo named Helga. She’s pretty tight, and once you start driving with her, you will understand why her name is Helga. I’d love to be friends. You will come to realize that I don’t fake who I am. I try to help people out as much as I can, and I’d love to help you anytime you need, but please don’t take advantage of me, and when I need you, please be there. When I graduate college I hope to join the Peace Corps or work for the UN in humanitarian aid. I want to help people who cannot help themselves, especially children. I am lucky enough to be born into an amazing family who loves me and who takes care of me, and I think that every child has the right to a mother and father, clean water, food, healthy bodies, and an education. I hope that I can make a difference in the world. The main thing you should know about me is that I am a Latter-day Saint. I go to church every weekday morning at 5:35AM and I go to church on Wednesday evenings and of course Sundays from 9-12. My faith is everything to me. More than any of the things above, being a Mormon has shaped me into who I am. The fact that I know that I am a daughter of God gives me so much incentive to be the best person I can be so that someday I can stand before him and be proud of who I am. I love my Savior and everything he has done for me. I don’t want him to question whose side I’m on. I want to be counted as one of the righteous.

school's out, summer's in.

ok

so its hard for me to believe that our family with our busy BUSY lives could ever get a blog and keep up with it, but i guess were going to give it a try. i'm just saying don't be dissapointed if you never see ours get updated. SUMMER HAS BEEN THE BEST EVER! i am soaking up every minute of the sunshine and fresh air. we have all been on a lot of vacations this year but we are still not done. next weekend we are heading down to trout lake and then meg in coming down for a visit, along with uncle nick.
